Three Veggie Stir Fry Thoughts and Inspiration:  I have a farm share of veggies that arrives every other Thursday.  It’s great… makes me try different things with all my favorite vegetables.  This weeks recipe highlights yellow squash and zucchini stir fried together in a delicious asian sauce.  It’s great on its own as a side dish, or you can serve it on top of some brown rice.  Enjoy!

  1. 1 tsp olive oil (or vegetable oil)
  2. ½ white onion (or yellow onion), sliced
  3. 10 oz package white button mushrooms, cleaned and halved (or quartered)
  4. ¼ cup dry white cooking wine
  5. 1 zucchini, chopped into cubes
  6. 1 yellow squash, chopped into cubes
  1. 1 Tbsp Vegetarian Hoison Sauce
  2. 1 Tbsp Vegetarian Mushroom Flavored Stir-fry Sauce
  3. ½ tsp Sriracha
  4. 2 Tbsp Soy Sauce
  5. 1 tsp Chinese Five Spice
  1. In a bowl, whisk together all sauce ingredients.
  2. Heat a large saucepan over medium heat and stir fry onions in oil for 3-4 minutes.
  3. Toss in all mushrooms and cook for 8-10 minutes.
  4. Once mushrooms look close to being cooked through, stir in wine.
  5. Allow wine to absorb/boil off, approximately 4-5 minutes.
  6. Drizzle 1 Tbsp of sauce onto mushrooms and stir together for 2 minutes.
  7. Next, add in zucchini and squash cubes; stir together and cook for 5 minutes.
  8. Pour in all remaining sauce, stir together and allow sauce to coat vegetables.
  9. Cook an additional 2-3 minutes.
  10. Sprinkle sesame seeds when serving.
  1. Lee Kum Kee is a great brand for vegetarian Hoison and mushroom flavored sauce.
  2. Mushroom flavored stir-fry sauce is a great alternative to oyster sauce.
  3. Chinese five spice is a blend of: pepper, anise, fennel, clove and cinnamon.
