Thoughts and Inspiration: We were supposed to go over to our friends place for dinner, but had to cancel because something came up last-minute. My girlfriend was going to make white bean burgers, so of course I am craving something like that! I ironically had some leftover white beans in my refrigerator so I decided to cook up my own! This white bean burger is a unique blend of flavors… smooth white beans with zucchini and onion tied together with smokey gouda cheese. As always, make it yours and be unique! For those of you that are carb conscious, you can eat this patty over a bed of greens or wilted spinach. Enjoy!
Thoughts and Inspiration: A good sandwich can be so comforting, no? Sandwiches can be as simple or as complex as you want to make them. It’s the perfect mold to hold your favorite flavors together. This vegetable panini is bold with flavor and perfectly melty with the right amount of cheese. I made all the fillings to this delightful panini and assembled it together for a first homemade meal at my very good friend’s new house! It was a beautiful Sunday afternoon with the sun shining and new homeowners love in the air! Congrats to the Ferenz’s!
Thoughts and Inspiration: Rolled up goodness! That is exactly what this kati roll is all about! Tangy, spicy, flaky and mmm mmm yummy! Spiced up chickpeas turned into channa masala topped with lemony onions. I mean what really is a kati roll anyway!? It’s street-food originating from Kolkata, India. I think of it as an Indian flavor filled burrito! You can literally put anything into it. It’s perfect to entertain with and it’s awesome for something on the go! Your kids will love it too! Thoughts and Inspiration: This chutney is really fresh and light! It packs in a punch of flavor that is perfect to spread or dip whatever you may like! Try it on sandwiches (shown here), flat-breads, or as a dip for samosas/empanadas… throw it on top of scrambled eggs, the possibilities are endless! This chutney recipe is a little bit unique… I actually made the chutney into a compound butter. A compound butter is a mixture of butter and supplementary ingredients to enhance flavor. Instead of individually buttering the bread (which from my experience can tear your bread up) combining butter with chutney creates the perfect smooth and balanced spread for your sandwich. Thoughts and Inspiration: Little bites for an appetizer or as a main entree, these aloo tikki sliders will satisfy any palate! It could be a perfect July 4th snack for your family and friends!!! Thoughts and Inspiration: A super quick dinner fix! My hubs has been playing a lot of hockey lately, so right before a night game I needed to carb him up, but of course throw my dose of vegetables into the mix. This sandwich is light, but substantial and will hold up well if you wrap it up in foil and take it for lunch!
Thoughts and Inspiration: Who doesn’t love pizza? I had some leftover garlic naan from the previous night’s dinner – so of course why not throw some cheese on there with your favorite fix-ins and turn them into delicious flat-bread pizzas!? The first one is a pesto/tomato/mozzarella and the second one is a mushroom/mozzarella/truffle. Enjoy and as always, make it your own and be creative!
Thoughts and Inspiration: A Saturday afternoon light lunch, still tasty and satisfying… what to make what to make?! My hubs and I love hummus-like spreads – that is where the base of this wrap stems from! Throw on a couple veggies, garnish, fold and we are ready to eat!
